An old family recipe

  • 2 cups (454 g) unsalted butter, melted
  • 4 cups (800 g) white granulated sugar
  • 4 (204 g) large eggs, beaten
  • 6 cups (750 g) all-purpose flour
  • 4 cups (988 g) mashed banana
  • 2 tsp (10 g) vanilla extract

Mix all ingredients together in large mixing bowl.

  • 1 Tbsp, 1 tsp (25 g) baking soda
  • 14 cup (59 g) water, hot
  • 1 Tbsp, 1 tsp (25 g) baking soda

Dissolve baking soda in hot water and add to mixture.

Bake in greased muffin pan or muffin cups at 350F degrees for 20-25 minutes or until golden brown.

Notes

The original has 1 cup sugar but I've also seen it written as 0.5 cups sugar.
