A fragrant Moroccan spice blend combining warm, floral, and spicy notes for seasoning meats, vegetables, and stews.

  • 1 1⁄4 tsp (2 g) ground allspice
  • 2 tsp (5 g) nutmeg
  • 20 saffron threads
  • 1 1⁄2 tsp (3 g) black pepper, freshly ground
  • 1 1⁄2 tsp ground mace
  • 1 tsp (3 g) ground cinnamon
  • 1 1⁄2 tsp ground cardamom seed
  • 2 tsp (4 g) ground ginger
  • 2 tsp (6 g) kosher salt
  • 1 tsp ground turmeric powder
  • 1⁄2 tsp (1 g) ground coriander
  • 1⁄4 tsp cayenne pepper
  • 1⁄8 tsp (0 g) ground cloves
  • 1⁄2 tsp (1 g) ground cumin

To make the ras el hanout simply combine all of the spices and store in an airtight container.

This spice mix will keep for months. A little goes a long way!
