A rich, creamy homemade Caesar dressing that’s balanced—savory and tangy without being overly garlicky or fishy.

This family-favorite Caesar dressing is rich and creamy with classic tang from lemon and Worcestershire, savory depth from anchovy paste, and a salty finish from Parmigiano-Reggiano. It’s ideal for tossing with crisp romaine, drizzling over grilled chicken, or using as a dip for vegetables. For best flavor, use high-quality mayonnaise and freshly grated cheese, and whisk thoroughly until smooth; then taste and adjust the salt, pepper, lemon, or garlic to your liking. Store covered in the refrigerator; it keeps well for about a week.

  • 1 clove 1 clove garlic, minced
  • 12 tsp 12 tsp anchovy paste
  • 1 Tbsp 1 Tbsp (15 g) lemon juice, freshly squeezed (from one lemon)
  • 12 tsp 12 tsp (3 g) dijon mustard, I like the brand Maille
  • 12 tsp 12 tsp (3 g) Worcestershire sauce
  • 1 clove 1 clove garlic, minced
  • 12 tsp 12 tsp anchovy paste
  • 1 Tbsp 1 Tbsp (15 g) lemon juice, freshly squeezed (from one lemon)
  • 12 tsp 12 tsp (3 g) dijon mustard, I like the brand Maille
  • 12 tsp 12 tsp (3 g) Worcestershire sauce

In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce.

  • 14 cup 14 cup parmigiano reggiano, finely grated, freshly
  • 18 tsp 18 tsp (1 g) salt
  • 18 tsp 18 tsp (0 g) black pepper, freshly ground
  • 12 cup 12 cup (110 g) mayonnaise, best quality such as Hellmann's or Duke's
  • 14 cup 14 cup parmigiano reggiano, finely grated, freshly
  • 18 tsp 18 tsp (1 g) salt
  • 18 tsp 18 tsp (0 g) black pepper, freshly ground

Add the mayonnaise, Parmigiano-Reggiano, salt and pepper and whisk until well combined.
