Vanilla Gelato

makes 2 quarts

Simple gelato

  • 3 cups (710 g) heavy cream
  • 3 cups (730 g) whole milk
  • 2 cups (400 g) sugar

Heat cream and milk and sugar in a saucepan over low heat until the sugar dissolves, and cook until bubbles form around the edge of the pan.

  • 1 vanilla bean

Remove from heat, scrape inside of vanilla bean into saucepan and put vanilla bean into the saucepan, and let cool for 30 minutes.

Cover and refrigerate for at least 3 hours or until completely chilled.
