Rich Roll Cookies

Delightful homemade rich roll cookies with a touch of vanilla.

  • 1 cup (230 g) unsalted butter
  • 2⁄3 cup (133 g) sugar

Cream together the butter and sugar

  • 1 (51 g) large egg

Beat in the egg

  • 2 1⁄2 cups (310 g) all-purpose flour, sifted
  • 1⁄2 tsp (3 g) salt
  • 1 tsp (5 g) vanilla extract

Combine and add the sifted all-purpose flour, salt and vanilla

Chill dough for 3 to 4 hours before rolling

Preheat oven to 350°

Roll out the dough and cut as desired

Bake for 8 to 10 minutes or until slightly colored
