Island Pork Tenderloin

Serves 4

A spice-rubbed pork roast browned in a skillet, then baked with a sweet garlicky brown sugar glaze.

Preheat your oven to 350F.

  • 2 tsp (12 g) salt
  • 12 tsp (1 g) black pepper
  • 1 tsp (2 g) ground cumin
  • 1 tsp (2 g) chili powder
  • 1 tsp (3 g) ground cinnamon

For the rub combine: salt, black pepper, ground cumin, chili powder, and ground cinnamon.

  • 2 lbs (910 g) pork tenderloin

Combine all the spices on a piece of foil or parchment paper big enough so you can roll the pork on it to coat it evenly with the spices.

  • canola oil

Heat some oil in a non stick pan and and brown the pork for about 5 minutes turning to brown on all sides.

Put the pork in a baking dish.

  • 1 cup (220 g) brown sugar
  • 2 Tbsp garlic, finely chopped
  • 14 tsp tabasco sauce (optional)
  • 1 Tbsp (15 g) water

For the glaze combine: brown sugar, finely chopped garlic, Tabasco (optional), and water.

Pat the mixture on top of the pork.

Cook for about 30 minutes at 350F.

Let it stand for about 10 minutes covered in foil prior to slicing then pour the sauce in a gravy bowl to be shared.
