Browning the pork first builds flavor and color before it finishes in the oven. For best results, coat the pork evenly by rolling it in the rub, then let it rest under foil after baking so the juices redistribute before slicing. Serve the pan sauce from a gravy bowl so everyone can add extra glaze to taste.
