This simple French toast uses a lightly sweetened maple-vanilla custard for a warmly flavored, breakfast-friendly result that’s crisp at the edges and tender inside. It’s perfect for a quick weekend brunch or a cozy breakfast-for-dinner. For best texture, soak each slice just until coated (not soggy), cook gently over medium-low so the center sets without burning, and keep finished slices warm in a low oven while you cook the remaining batches. Serve with extra maple syrup and fresh fruit.
Whisk together the milk, maple syrup, eggs, and vanilla in a large bowl.
Soak bread slices one at a time in egg mixture until well coated. Let each slice stand for 1 minute.
Heat a non-stick skillet over medium-low heat and add half the butter to melt. Lay two slices of bread at a time in skillet. Fry slices for about 2 minutes per side. Place French toast on a baking sheet in a 95 °C (200 °F) oven while cooking remaining slices.
Serve French toast with fruit and maple syrup.
