Extra-crispy oven-baked chicken wings tossed in a sweet, spicy homemade buffalo sauce—no frying required.

These crispy baked chicken wings use a baking powder seasoning technique to dry out the skin and help it crisp up in the oven, giving you fried-like texture without the mess and grease. They’re perfect for game day, parties, or an easy appetizer dinner, and can be served with classic sides like ranch and celery or tossed in different sauces. For best results, dry the wings extremely well with paper towels, use aluminum-free baking powder (not baking soda), and bake on a wire rack so hot air circulates around the wings for maximum crispiness.

Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.

Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat.
