Chocolate Hot Fudge Sauce

Real hot fudge sauce, the kind that thickens on top of ice cream

  • 1 1⁄2 cups (300 g) sugar
  • 3⁄4 cup (70 g) cocoa powder

Mix sugar and cocoa.

  • 1 1⁄2 cups (490 g) corn syrup
  • 3⁄4 cup (180 g) 12% cream

Add corn syrup, cream, and mix. Bring to boil. Simmer 3 minutes.

  • 1⁄3 cup, 2 tsp (85 g) unsalted butter
  • 1 1⁄2 tsp (8 g) vanilla extract

Stir in butter and vanilla.
