Beef Chow Fun

Prep 30 min · Cook 40 min

A savory and satisfying stir-fried noodle dish featuring tender beef and flavorful sauces.

  • 400 to 500 g skirt/flank beef steak, trimmed

Cut thin slices of beef.

  • 1 tsp (5 g) light soy sauce
  • 1 tsp (5 g) dark soy sauce
  • 1 tsp (3 g) corn starch
  • 1 tsp baking soda
  • 1 tsp (4 g) sugar

Coat beef slices in light soy sauce, dark soy sauce, cornstarch, bicarb soda, sugar and set aside for 10 minutes (or ideally 30 if you have time!).

  • 1 bunch green onion
  • 3 cloves garlic, chopped
  • 1 bunch broccolini (optional)

Cut all your other ingredients to size.

  • 400 to 500 g flat rice noodles

If you have dried rice noodles, cook them per packet instructions and rinse once cooked.

  • 1 Tbsp high-smoking point oil

Fry in a wok or a large fry pan on high heat with a bit of high-fry oil.

Set aside beef once browned.

  • 2 Tbsp high-smoking point oil
  • 200 g beansprouts

Add all other stir fry ingredients and cook for 2 minutes.

Add the noodles.

  • 1 Tbsp (16 g) dark soy sauce
  • 1 Tbsp (16 g) light soy sauce
  • 2 Tbsp (35 g) oyster sauce
  • 1 Tbsp (14 g) sesame oil
  • 1 tsp (4 g) sugar
  • 1 lemon juice

Add all sauces (dark soy sauce, light soy sauce, oyster sauce, sesame oil, sugar, lemon juice) to a bowl and then into the stir fry and coat the noodles until brown colour.

Add the beef back in and cook for 2 minutes.

Serve hot & fresh.
