This big-pot chili is loaded with lean ground beef, kidney beans, and tomatoes, then deepened with beer, beef broth, and warm spices for a rich, crowd-pleasing bowl. It’s ideal for game day, casual get-togethers, or make-ahead weeknight dinners since it reheats well and thickens as it sits. For best results, brown the beef and aromatics well for extra flavor, then simmer uncovered until the chili reaches your preferred thickness; adjust heat with extra chili powder and finish with your favorite toppings.

  • 2 lbs (910 g) lean ground beef
  • 2 Tbsp, 1 12 tsp chili powder, divided, or to taste

Combine ground beef and chili powder.

  • 1 onion, diced
  • 1 jalapeño peppers, seeded and finely diced
  • 4 cloves garlic, minced

In a large pot, brown ground beef, onion, jalapeno, and garlic. Drain any fat.

  • 1 tsp cumin
  • 1 green bell pepper, seeded and diced
  • 1 can crushed tomatoes (14.5 oz)
  • 1 can red kidney beans (19 oz), drained and rinsed
  • 1 can diced tomatoes (14.5 oz)
  • 1 12 cup beef broth
  • 1 cup beer
  • 1 Tbsp tomato paste
  • 1 Tbsp (13 g) brown sugar (optional)
  • 1 salt, to taste
  • 1 black pepper, to taste
  • 1 tsp cumin

  • 1 can crushed tomatoes (14.5 oz)
  • 1 can red kidney beans (19 oz), drained and rinsed
  • 1 can diced tomatoes (14.5 oz)
  • 1 12 cup beef broth
  • 1 cup beer
  • 1 Tbsp tomato paste
  • 1 Tbsp (13 g) brown sugar (optional)
  • 1 salt, to taste
  • 1 black pepper, to taste

Add in remaining ingredients and bring to a boil. Reduce heat and simmer uncovered 45-60 minutes or until chili has reached desired thickness.
